Thanksgiving Dinner Timeline: A Two-Week Plan (Canada & US)

Hosting Thanksgiving is mostly a timing puzzle. The food isn't hard; the stress comes from everything landing on the same afternoon. Spread the work over two weeks and the big day becomes mostly reheating and enjoying people. This timeline works for Canadian Thanksgiving (the second Monday of October) and American Thanksgiving (the fourth Thursday of November).

Two weeks before: guests, menu and the turkey

Confirm who's coming and ask about allergies and dietary needs. Then build the menu around your oven: the turkey needs it for hours, so choose sides that can be made on the stovetop, in a slow cooker or ahead of time. Assign dishes to guests who offer to help, and write down who is bringing what.

Order or buy the turkey now. A good rule of thumb is about 1 to 1.5 lb (450–700 g) per person if you want leftovers. Check you have a roasting pan that fits your oven and a meat thermometer.

One week before: shop and make space

Buy drinks and anything that won't spoil: flour, sugar, canned pumpkin, broth, stuffing bread, foil and containers for leftovers. Clear out the fridge; a thawing turkey takes up a whole shelf. Plan your serving dishes and utensils, and borrow what you're missing.

Pie crust, dinner rolls and cookie dough can all be made now and frozen.

Thawing the turkey safely

Thaw a frozen turkey in the fridge, never on the counter. Allow about 24 hours for every 4–5 lb (2 kg): a 12 lb bird needs about three days, a 20 lb bird about five. Keep it in its wrapping on a tray on the bottom shelf so juices can't drip onto other food.

Running late? You can thaw a turkey in its sealed wrapping in a sink of cold water, changing the water every 30 minutes. Allow about 30 minutes per pound and cook it as soon as it's thawed.

  • 8–12 lb (3.6–5.4 kg): 2–3 days in the fridge
  • 12–16 lb (5.4–7.3 kg): 3–4 days
  • 16–20 lb (7.3–9.1 kg): 4–5 days
  • 20–24 lb (9.1–10.9 kg): 5–6 days

The day before: bake, chop and set the table

Bake the pies, make cranberry sauce, peel and chop vegetables, and prepare the stuffing base (keep it separate until you cook it). Set the table tonight, including place cards, so tomorrow morning is only about cooking.

The big day: work backwards from dinner time

Choose when you want to eat, then count back. Subtract 30 minutes for resting and carving, then the roast time for your turkey's weight (about 3 to 3¾ hours for a 12–14 lb unstuffed bird at 325°F / 163°C). Roast times are only estimates, so go by a meat thermometer in the thickest part of the thigh, not touching bone. Food-safety agencies recommend at least 74°C / 165°F, and Health Canada recommends 82°C / 180°F for whole birds.

While the turkey rests, make the gravy, warm the rolls and finish the sides in the oven. Then sit down and let someone else carve.

Don't forget the thanks

A small tradition makes the meal feel like more than dinner. Ask each guest to write one thing they're grateful for on a place card, or go around the table before dessert. Kids can decorate the cards while the turkey roasts.
